The enormously rich and varied culture of india has evolved over the ages. Indian cookery is famous all over the world and enjoys a reputation that can only be matched by the Chinese and French. India is a vast country and its food,people and customs have captured the imagination of the whole world. During festival, the emphasis is on abundance and flavour. Rice is still the staple food, but it will be combined with meat and stock to make sumptuous pilaus.
