BAKED TOMATOES

INGREDIENTS: For 3 people, you need 4 or 5 tomatoes, pepper and salt to taste, a knob of  butter and some bread crumbs (from a packet is fine, if you don’t have any fresh).

Method: Remove any stalks from the tomatoes and cut them into thick slices. Place tomato  slices in a deep baking-dish and season to taste with pepper and salt and most of the  butter. Use the breadcrumbs to cover the tomatoes and dot the rest of the butter on top, or else you can gently melt it and then drizzle the remaining butter over the breadcrumbs. Bake for between 20 minutes and half an hour in a moderate oven. Serve piping hot. This is a great and more unusual vegetable to serve with any meal, especially meat or  fish but also goes well with basically anything.
