Coffee contains many oils that will build up on coffee brewing equipment after prolonged use. If these deposits are not removed they will cause coffee brewed in the machine to taste sour and unpleasant. It is imperative therefore that proper cleaning and maintenance procedures become part of the daily routine particularly for commercial espresso machines.
