You can never have enough spice in your life. Among the many great recipes for canned salmon there is a wonderful little dish known as Fat Tuesday Salmon that will let you bring some fish and serious flavor to the table. For this recipe you will need one peeled potato, 1/2 cup diced onion, one beaten egg, one seeded and minced jalapeno pepper, two 14.75 ounce cans drained salmon, 1/2 cup diced green bell pepper, two tablespoons vegetable oil, one teaspoon ground black pepper, and 1/2 cup cracker crumbs.
