Cooking has come a long way over the past few centuries. We are no longer limited to cooking over a fire, and the range of food available today is amazing to say the least. People are now deep frying turkeys and ice cream, cooking food in aluminum foil and microwaving dinners before the big game. Another new trend, at least over the past several years, is sous-vide.

Turkeys cook especially well in the clay bakers as the bakers naturally seal in moisture and nutrients. The results from the clay baker are surprisingly better as the bird is basted in its own juices and nothing has to be added and nothing more has to be done once it is in the oven.

Clay bakers, also called clay pots or hot pots in the Far East go back centuries in traditional cooking both in Western and in Eastern civilizations. The Chinese and Romans both used these pots to cook and bake a variety of dishes from full imperial feasts, to meals for the family, to meager bread for the masses. But this method of cooking food has not remained in antiquity and in fact has risen in popularity due to people wanting healthier meals and lifestyles.

It’s hard to find a really good cookbook for preparing authentic classic meals from India, but after years of searching, I have finally come to the conclusion of my favorite one. So, I’d like to recommend this book to you with a caveat, I am coming over for dinner if you plan to make any of the great dishes inside.
